Although it may be feasible to get something working with the Apple Parallel Interface Card, it can be a hassle trying to match whatever protocol iomega chose to use to the limited signals on the APIC. A better solution may be something like Mike Willegal's 6522 proto card. With it's built-in EEPROM, one could even write a SmartPort interface and have it just work with ProDOS. Also, it's probably easier to find Mike's card than an APIC.
