Tim, I have never used an i-book so I can't give specific experiences.
However, I offer these generalities:
Pros: portability
Cons: lack of builtin floppy drive
USB/Firewire/Ethernet ports only (no SCSI or convential RS422 serial
ports for localtalk etc., hence difficulty in interfacing with other
Apple II computers.
And the list goes on ...
However, an i-book can probably run system 7.5, 7.6, 8.1, and 8.5. These
will provide a good platform for Apple II emulators, as well as DejaII for
running classic Appleworks. Bernie to the Rescue is still supported for
Apple II emulation (probably works with 8.6 - 9.x too). You may be able
to find Gus somewhere too.
I think you will find using a laptop for your AppleII emulation a fun
experience. Good luck!
