I don't know about 6502es but 65c02es have become fairly quick. IIRC,
WDC sells a 14mhz MPU. There may be even faster variants.

While you could replace an old CPU with one of these newer chips you'd
be limited to the system's original speed. Apple IIes weren't built for
over clocking unfortunately. You might be able to do it with an
accelerator though.
