That will depend on the software.  If it is ProDOS based and does not
have the 'volume' or 'Prefix' hard coded into the program then yes, it
should work.  If you are dealing with most games, no.

AppleWorks and other productivity software can be installed and run
easily from a hard drive by entering in configuration 'volume/prefix'
information.  Most ProDOS disk based software require the 'volume' to be
online.  Some of these you may be able to hack and change the hard coded
volume information into looking on your hard drive instead of the disk.

If you choose to hack your ProDOS software, remember to keep directories
and volume names very short as most disk volume names are short too.

For regular DOS 3.3 disk based software, there are some utilities out
ther to run 'disk images' from your hard drive.  I saw just such a Q&A
here a day or two back, look for it if interested.
