The only think I am missing is a monitor/display for it. Loe and
behold, even older monitors with composite inputs are becoming
difficult to obtain. I am in the major los angeles area, and just
about all my sources have dried up.

What is the best/modern approach to getting this thing wired up? I
know some folks have mentioned using SCART capable monitors, but I am
trying to avoid going to ebay/uk.

I also know some folks mentioned using 'scan doublers' to convert to
VGA. Reading the newsgroups, it would seem that the quality is very
hit/miss ...

So what is the straight scoop? Aside from trying to source of (20+
year old) apple color RGB, what are my options?

The most tried-and-true approach seems to be the Highway 100 scan converter (also sold in UK and Europe as the CYP CM-345S). While there does seem to be a slight variability in results, we're talking relatively minor artifacts. To say "hit or miss" is a bit strong. Most of us are quite pleased with the resulting display. You will need a SCART adapter for it. Roger Johnstone sells them at a reasonable price. Or, if you're handy on the bench you can buy a SCART-to-SCART patch cord on eBay and cannabilize that (I've built several for other classic computers with that approach since the raw connectors are not available here).
