I feel a bit dumb having to ask this, but I haven't seen a non-enhanced IIe in
years... Just picked up a clean, resin-case IIe with 1982 motherboard from
eBay. For some reason, I had it in my head that the original IIe ROMs
displayed

Apple ][e

at startup, but this one comes up simply with

Apple ][

Is that the expected splash screen, or is there supposed to be an 'e' on
the end?

"Apple ][" is correct. It looked the same as the II+ except for being in
mixed case rather than all caps.

The Apple IIc said "Apple //c", and the Enhanced IIe followed that
pattern, with "Apple //e".

Ok, thanks for the answers everyone! I knew that the enhanced IIe came up with //e, so I thought for some reason that the original model said "][e".

This machine is a fairly early unit and a nice addition to my collection. I still have my first IIe, which started out the same but has had numerous holes hacked into the back of the case over the years (and was updated to enhanced ROMs circa-1984 or so).
