yea, you can squeeze some GPIO out of the motherboard to twiddle
lights out other external systems, but I think you would need a card
on the II (unlike a pc which has a parallel port standard)  and there
was software packages for kids that let you do experiments using
that.

Another one might be to try and digitize voice through the cassette
port or even just a simple software project
