There are quite a few things you can do with your IIe computers.
Prinarily I use mine for games. Some people get AppleWorks and do
database and spreadsheet stuff to track their business. Not to mention
the word processing for correspondance.
Due to its speed and memory limitations, more of the modern uses like
web browsing are not really practical for it, but it has some nifty
educational software. They also tend to be reliable workhorses. I've
been through 3 Intel based PCs in the last 5 years, I've had one IIe.
