Run System Utilities on the IIGS connected via AppleTalk to the Mac.

As long as the file names are compatible, it can move files from Mac to 
ProDos to DOS to Pascal, and probably SOS as well.

You might search for a WorkStation card too. It will allow the older 
Apples to connect to AppleTalk volumes.
