Rubywand has given you a good alternative to using a Mac, but if you should
still want a Mac here are some considerations:

For compactness/cheapness, the SE/30, Classic II, and Classic are good
choices. They're very small and can run System 7.5.X, which makes it easy to
read/write Mac, PC, and 800K ProDos diskettes.

The LC I, II, III, and Color Classic (plus a few other models) are worth
considering because they are common, cheap, and have a slot that can take
the IIe Card, which allows those machines to switch into IIe mode.

Otherwise, there are many that will do the job. The newer, more powerful
machines are not suitable, they don't have compatible floppy drives, etc.

A couple of things about using Macs to transfer files to your IIgs:
You can use the Mac to copy 800K ProDos disk images, such as the system
software available as free downloads from Apple. This is a very good thing.
Use Shrink II on the Mac to extract .shk files to ProDos disks, without
forking them.
If you move .shk files using your Mac, it will fork the files. Shrinkit GS
can deal with that, but the older 8 bit version of Shrinkit can't.  This is
a real problem for getting started.
