Clean 'Apple III' --> how to read from Profile-drive?

I have an old 'Apple III' with a 5MB profile harddrive and composite Monitor

I have little experience with the III's from before and I would need some
advice on how to read contents on the harddrive:

--> The system arrived to me with no leads, disks or documentation and had
not been started up for 15 years,  I was told.

I  checked and cleaned up the cirquit board, touched up cards and sockets.
I've connected the Profile with a new straight-wired ribbon cable DB25M

Inside is a CP/M card  'Softcard III' and a parallell printer card.

I then generated  a fresh set of  system-disks  using the  ADT -software
from an Apple IIC usinge DSK-images available on the internet (Ground -site)

I then fired up the machine and the Profile-disk using a  S.OS. Kernel
startup disk after the ready-sign stopped blinking on the drive.

After entering the S.OS Menu program I was able to list the content of
floppies.   I  also successfully loaded the Apple II-emulation disk and
started a few A2 games / programmes from here.

My questions are:

How do I read the old content from the Profile, does the harddrive need
special drivers?

Is the harddisk not readable from S.OS if the machine has been used only
with CP/M?

If the unit has been used as a  true CP/M machine I guess the programmes on
the disks might be CP/M.   Where do I find the start-up disk for the
Softcard III?
