If you want your apple II to speak your WordProcessor files (or any
others), install an Echo card in a slot (not 3 of course), and print to
that slot.  It'll speak the whole file for you.

I know you can enter control codes into AppleWorks.  You can control
the pitch, speed, etc. of the speech, directly from AppleWorks.

You can also control WHAT the echo speeks with control codes.  You can
have it speek "parenthesis" when a ( is printed.  Same for period,
comma, etc.
