When my original Commodore 1084 monitor was dying I hooked up a
Monitor II green screen to the composite video out of my IIgs and used
it for most of my regular work and only used the RGB when I needed
colour. The green screen gave a nice sharp image especially when the
IIgs display control panel was set to monochrome.
I'm sure setting the display control panel to monochrome would help in
many cases where colour wasn't needed when using a colour composite
monitor as well.
I've also hooked the composite video out of my IIgs to the video input
on my ATI All-In-Wonder-128 video card on my PC and got decent result.
If I were to make an RGB to S-Video converter, I'd probably get even
better results.
