Yes z80 cards can be used on the IIgs although they aren't all that popular
on them

You can add both a SCSI hard drive and a CD-ROM to a IIgs or a IIe.
CD-ROMs are less popular due to the dearth of Apple II CDs on the market.
Both them are pretty close to plug and play. For the hard drive just format,

partition and start installing your software.
If you just want a hard drive a very good alternative is the Focus hard
drive
from Alltech. Basically a 2.5" ide hard drive attached to an interface card.

You plug the whole thing into a slot and you're off. Comes preformatted with

the operating system and a few other things installed. Definitely plug and
play.

but there's a lot more for sale on ebay.
