You can get the image from an asimov mirror (ROM images directory).
To replace the mask ROM with an EPROM you will need an adapter socket.
The 27C010 or 29C010 has 32 pins, the mask ROM has only 28. Ask for an
Atari TOS adapter, these guys had the same problem.
You can use two of your 27C512, but then you will need an additional
74LS00 to generate the two chip enable signals.
