My Orca/M experience is with the package for IIgs (v1.0 - v2.1.0). It's
my favorite Apple II assembler and easy to use with a bit of practice. The
catch is the "bit of practice" part. You can expect to broaden your
vocabulary of swear words in learning to use just about any assem package.

In any case, the documentation I've seen (with Orca/M and Merlin) aims
to supply you with the information you need to use the particular package. It
does not really try to teach assembly language. (You can find a number of
references for assembly language info and examples in the Programmer FAQs.)
