I think I can speak for everyone in saying that your quesions are welcome
here and likely someone can answer them. However I don't mean this badly
but I think you're asking too many questions in one posting. Usually it's best
if you have quite a few questions to make several postings. It makes it much
easier to answer. If you have cards that you can't identify, describe them her.

It'd be a pretty oddball card that someone couldn't pin down.
I'll try one of your questions since I have to go out soon and pick up some
Apple II equipment. Undoubtedly someone will expand on my answer and
someone will cover the rest.
I take it you're asking about the 3.5" Unidisk. To use one on a IIe you need
a controller card . The card, made by Apple, can be identified by the
inscription
Liron on the solder side or the words "APPLE 3.5 FLOPPY DISK DRIVE
INTERFACE CARD" on the component side.
The 3.5 UniDisk drive is white in color, the eject button is higher than the
floppy disk opening and there is a small 1/8" hole under the eject button not
in the middle as in some other drives. On the bottom, if someone hasn't
peeled it off is a label saying "UniDisk 3.5"
