Actually, some of those "VGA/Mac to video" converters will do
it.  There are some that output video RGB (which the IIGS and
some flat panel LCD projection displays use) as well as the
usual composite video and S-video.

But these converters cost over $100, so it is probably better
to just use a Mac monitor.

A third option involves hacking the monitor to get it to sync
at double the scan rate.  But you should only attempt it
if you are a qualified monitor technician.  There are lethal
voltages, even unplugged, in a monitor.
