With a 1MB partition, the "Easy Install" option will probably install
the same files as you get on an 800K floppy.  This is a bare minimum set
for running most GS/OS applications on a system which only uses the
ProDOS file system.  Some of the more esoteric toolsets and fonts are
omitted.

A better option would be to set up a partition which is about 1.5MB (or
perhaps a little larger), then use the Customize option to install
"*System 6:Hard disk or FDHD".  This gives you a more complete set of
files, including the HFS file system translator, all the toolsets
(except MIDISynth), most of the standard fonts, and most of the drivers.
