It sounds like you've made excellent progress, Terence.  Well done.

This seems to imply that the card only uses a single EPROM to hold the
disk contents.  If so, is there any reason why you couldn't support
multiple chips, perhaps using jumpers to set the memory mapping options?

Taking this one step further, you could even support Flash ROMs, which
would allow in-system programming (with special software, to avoid
repeatedly writing to directory blocks).
