In my experience the 5.25" drive icons do not always appear on my IIgs
desktop (when I have 5.25" drives connected and enabled). It has to
do with the way that the driver tries to detect the presence of a
5.25" drive. It doesn't always work.
The solution here is to insert a floppy into the 5.25" drive before
going to the Finder. If you are already in the Finder, you need
either need to run another program and quit back to the Finder or
shutdown and restart your machine to get the Finder to see the 5.25"
drive.
Once you have the icon back on your desktop it will remain there until
you leave the Finder again. When you come back to the Finder, if
there is no 5.25" floppy in the 5.25" drive, you might lose your 5.25"
drive icon again.
If you need to access 5.25" disks a lot, you might want to keep a
floppy inserted at all times.

Hold down both Option and Control while double-clicking a document.
This will give you a standard file dialog box that you can pick what
application to start whenever a file of that type is clicked. Finder
makes not of this application and document file type so simply
double-clicking after doing this once will always launch that
particular application.
If you want to override the normally associated application and not
have Finder remember the new application, hold down the Option key
while double-clicking a document and you will get the file dialog
again.
This stuff is mentioned in the Finder's help menu (not to be confused
with Seven Hills' !Help! NDA) as well as a Teach file called Shortcuts
that is included on the System 6.01 disks. I'm pretty sure it gets
installed into the System folder with a standard hard drive install as
well.
