Found it!

Here is the pinout for the sound connector (J25).  Pin 1 is closest
to the front of the computer:

1. A/D Converter Input (3000 Ohms)
2. Analog ground
3. Analog output (-5 to +5, 10000 Ohms min)
4. Channel addr 0
5. Channel addr 1
6. Channel strobe (goes low when addr is valid)
7. Channel addr 2

So it looks like for sound input, you only need pins 1 and 2.  The
rest are for demultiplexing sound output stereo (or higher) cards.

Note that none of the sound cards, input or output, actually MAKE
any music/sound.  The actual sound is created on the IIGS
motherboard itself in the Ensoniq 5503 DOC sound chip, which
is a wavetable synthesis generator with 32 oscillators.
