So basically, you have a SuperDrive equipped Apple IIGS and you
used the MS-DOS FST to pull the text file off the MS-DOS disk and
then used the HFS FST to put the file on an HFS disk.

Excellent!

Don't use AppleTalk. Just stick the HFS disk into the Mac. Macs
can read HFS disks just as well as the Apple IIGS.

Via an HFS disk.

A couple of points to keep in mind...make sure the text file on
the MS-DOS disk has the 3 letter extension is .txt so that GS/OS
knows that it is a text file. This will let you get a text file type
when you copy it off the MS-DOS disk, which means it will
get a MACINTOSH text file type when you put it on the HFS
disk.

After that, forget about clumsy AppleTalk. Just stick the
HFS disk into the Mac's drive.

Good luck!
