Force transducer is for converting a force (from,
for example, a frog muscle) into an electrical
signal so that you can chart it on the Apple II.
Probably outputs to a physiograph which prints
the results.
Looks like you have a card made specifically for
a physiology laboratory. The EEG leads also
typical for this type of equipment.
