Practically anything.

There are people who are serving web pages from Commodore 64s.

The IIe can be used for control anything electronic.  It can be used
as a security system, a weather station or as the brains of a home
built robot for example.

There are thousands of games that are still fun to play.  (I still
have a number of role-playing games on my Apple II that I still have
yet to finish.)

There are thousands of educational programs that can still teach
youngsters and adults about different things.

There are productivity programs so you can write letters, keep a
budjet, organize your video tape library.

Basically, you are only limited by your imagination.
