These programs come into my mind:

Graphics Viewers:
Second View (comes with card)
GView
Third View

Games:
Omega (Extended Ascii character set)
Falfus
Cogito2

There may be more which I've forgot. There are also rumours that
someone works on a Second Sight rewrite of the QuickDrawII tool set.
This would give you a whole stack of new applications for the card.
