Easier option: use Custom Install, and pick "*System 6:On FDHD or hard
drive".  It includes everything you might typically want, including the
HFS FST.

In fact, I suspect the Easy Install option will do this as well if
installing to a large enough volume, but I prefer to know what is going
on.

Note that you should never use Copy II Plus (any version) to do file
operations on a ProDOS volume that is being used by GS/OS, as it is
likely to damage the file system.  Simple catalogs are OK, as are entire
disk operations (format, copy, etc.)
