All Macs, up to the iMac do have appletalk built-in. I have a friend
who has an 8600/350 with the Imagewriter II/Appletalk option (along with
an appletalk laserprinter also.) There are too many printers out there
that have had appletalk capabilities for them to not include it without
another viable alternative.

They use a special cable...mini-din 3 I do believe...don't feel like
pulling my appletalk network apart to check.
