Apple //e card questions

I just rummaged up an Apple //e card to put in my new Color Classic. I got the
card, cable, and software, but no manual. So I have some questions. First,
how do I access the preferences? When I run IIe startup, I end up in //e 
mode and haven't figured out how to stop it. Second, I expect there is some
key combo to get back to Mac mode, but I haven't figured it out. I don't
expect power cycling to be the right way but that's all I can do to get back
at the moment. Kindly post any advice.
