I recently tried this with my Mac IIcx and an original Apple 8-bit video
card and found that it does work, using the word "work" very loosely.  The
GS monitor goes into interlaced mode, and text is pretty much unreadable.
 
IMO, you would be much better off looking for a used SVGA (PC-type) monitor
or a used Apple color Mac monitor.  The SVGA monitor is more common in the
used market and will more likely work with other computers you might use in the
future.
