Please have a look at my program ProTYPE. It should help you to get the 
first part (Mac -> IIgs) done. Just drag & drop the files on it before
you transfer them to ProDOS disks.
On the IIgs, you should use ShrinkIt GS to recreate disk images from the
archives.
