I have just finished getting a "new" GS working. The way I did it is:

1. Use a Mac to download the OS images from the Apple site.
2. Write the images out to 800k disks with the Apple utility.
3. Boot the GS with the GS-OS disk one, pick customize, create a boot disk
    with Appletalk. (lots of disk swapping)
4. Configure the GS as per the FAQ for Appletalk, hook the GS and Mac
    together and set up a shared folder.
5. I then moved the finder to the shared folder to make more room on the
floppy.
    You can set the moved finder to run on bootup with the start up control
panel.
