For desktop publishing, you'll want GraphicWriter II v2.0 from
SevenHills Software.

For graphic design, there are a number of different drawing and
painting programs available, each with their own strengths and
weaknesses.  Probably the best one to get would be PaintWorks v2.1 (I
think that is the latest) from Scantron Quality Computers.

As for scanner software for a flatbed, the only such software for the
IIgs that I'm aware of is a beta program on one of Apple's Developer
CD-ROMs that allows you to scan but you cannot save the image unless
it fits entirely on screen and you run a separate screen capture
program.
