Well, that's pretty much true. Because of the complete unexpandibility of
the IIc, it is extremely difficult to expand its capabilities beyond its
original ones.
Several possibilities include:
RGB color-If you have composite right now, this should be a big
improvement, with better clarity and color (although the resolution is the
same.
Acceleration-the ZIP chip allows you to speed your IIc up to 8mhz
Printing-actually, I'm not sure about this one, but I think you can buy a
serial to parallel converter, and then use maybe a DeskJet? (People?)
Ram-Several cards have been made, Quality computers still supports some of
them. Expand up to 1 megabyte and prepare to be amazed.
Hard drive-These are drives which can be attached to the disk drive port
on your IIc. These are usually extremely expensive.
3.5" Drive-These can be added to some IIc systems, but not others (ask
here for info or maybe check the Apple II FAQ)
Word Processing-the latest and greatest thing is AppleWorks 5.x, the best
ever text-based Word processor:). It is available from Quality computers.
Modems-the IIc can handle speeds up to 14.4k (usually) though I'm not sure
about all models. Adding a zip chip helps.

That should be enough to get you started. Make sure to check in here and
comp.sys.apple2.marketplace for support and needed software or hardware.
Welcome to our world and enjoy your stay.

IIb or not IIb (then it's IIc),
