OK, putting large amounts of RAM in a IIgs makes perfect sense, as GS/
OS will use it. What use is a large RAM card (beyond the standard 64K,
80 Column card) in a IIe? Using it as a printer buffer is the obvious
answer, but one that I wouldn't find personally useful.

Appleworks will make use of the extra memory and so will other
programs, such as Publish It!, that are designed to make use of it.
There aren't a lot of programs that can do anything with it but there
are a few.

Disk copy programs are generally capable of using extra RAM (of any
kind) to minimize or eliminate disk swapping during copying.

This does not use the RAM as a RAM disk, but simply as additional RAM.
