I see you already have at least a partial answer to your question:  pressing 
Open-Apple and Control keys at the same time pressing the escape key.  That 
takes you to the control panel where you can change the clock and other 
goodies.  Setting you make in the control panels remain in effect even after 
you power off the computer.  One exception:  If the battery on the logic 
board is dead, it all returns to factory defaults.  Changing the battery can 
be a pain (official Apple policy is to take it to your dealer where they 
will desolder the old battery and solder on a new.  Unofficial policy is to 
get a Nite-Owl battery if still available and do it yourself).
