A few obvious things to check:

1. Do you have new enough system software?  GSHK requires System 5.0.4
   or later, and I'd recommend using 6.0.1.

2. Do you have enough RAM?  With 6.0.1, you should have at least 1.5
   MB to be able to use GSHK well, assuming you don't have much in the
   way of desk accessories or a /RAM5 volume (if you do, then increase
   the minimum RAM accordingly).

GSHK cannot extract 5.25" compressed disk images.  Use the 8-bit
version (ShrinkIt 3.4.0 or IIPlus.Unshrink 2.0) for that.  3.5" disk
images should be fine.

I've rarely had GSHK crash on me, and in those cases it has usually
been due to a very badly damaged archive file.
