There is DB Master Pro:

DB Master was put in the public domain some time ago, howevrer, the
Pro version was not. In any case, you really need the manual. The Pro
is a true relational data base and I believe that you get a bunch of
book keeping examples when you buy.

Also, there is AppleWorks 5.1. The DB allows up to 60 categories and
in addition it has Randy Brandt's "Total Control" which is a
relational data base with spreadsheets thrown in. Here you probably
need to send mail to Randy (address not at hand) and ask what he
charges for the Total Control manual since there isn't too much
documentation that I found with AppleWorks 5.1

Finally, there are a lot of AppleWorks book keeping templates
available from the NAUG BBS or Joe Kohn. Joe outlined one here a few
days ago. There are others in there. One that comes to mind is a whole
set of templates called ParishWorks.
