One solution, keep the Apple joystick cable and puchase an IBM CH Mach I
($19.99 in most stores) and rewire the joystick.  Works like a charm
either way (Apple -> IBM or IBM -> Apple).  Very easy to do if you have
a previous CH Mach model for you Apple II.

FYI, about one year ago my brother broke the shaft portion of his IBM
CH Mach I.  I needed new potentiometers (newer) for my Apple II CH 
Mach II.  He bought a new joystick and I took the potentiometers from his
broken Mach I.  What a treat to have new pots!  Just though people might
like to know that the Mach parts are backward compatible.
