You will need much more than just the bus connector layout. You will need 
to know what each of the signals do and how they relate to each other. 
You will need to know how the memory and logic on an interface card is 
supposed to be configured for compatability with the Apple.

There is a very good book on the subject, which may still be available 
from Howard W. Sams. The book is APPLE INTERFACING, ISBN: 0-672-21862-3, 
by Jonathan Titus, David Larsen, and Christopher Titus.  Another good 
source of info is the Apple IIe Tech Reference, which may still be found 
(but, I don't know where).

Since the "bus" is accessed at the slots (where interface cards are 
plugged in) , you will need a way to manufacture printed circuit cards to 
plug into the slots. 

Interfacing to the game port is much simpler, but offers much less 
capabilies. Infomation on that is more readily available. If you do not 
find the details on the game port, I can email it
