It is unlikely that you'd be able to fry the computer by inserting a
card designed for another Apple II. The card might not work, but is
unlikely that it would damage the computer (unless you plugged it in
backwards, or inserted/removed it while the power was on, or plugged
it into the wrong type of slot).
The ProFile and Apple II controller should work fine in a IIgs. I
think you might need a ROM upgrade to make it work properly, though.

Not true. Most, if not all, Apple II parallel cards should work fine
in a IIgs. To use it with native GS/OS software, you would need a
compatible IIgs Print Manager port driver. There is one supplied with
GS/OS that works with Apple's own card, but I don't know how many
other cards it works with.

This is less likely. Some Z80 cards work with the IIgs, but other don't.
