have you installed AppltTalk on the GS using the installer/master disks?  
there are several files, for instance, that go into the System Setup
folder that are absolutely required.

no need to format ProDOS - the IIGS can read the HFS formatted disk if you
make sure you have the HFS FST installed.. and it may not matter over the
net.. I'm not sure.

and yes, the IIGS can run applications stored on the mac.. the IIGS sees
the HD as though it were it's own.  You just can't run MAC applications.
