There's a high probability that (1) your HD is a SCSI HD, (2) your HD
controller card is an Apple SCSI card, and (3) that the floppy disk(s)
you're using to boot do _not_ have the Apple SCSI driver files in the
/*/System/Drivers folder.  

If all 3 of the above conditions are met, your HD won't appear when you
boot from the floppy (disk(s).  (Back in the olden days when I was a
formal tech support weenie, I must have fielded a hundred or more calls
from folks who were in this pickle.)

Sooo.....  Check the contents of the System/Drivers folder of the floppy
disk of your choice to see if it contains the 2 SCSI driver files, and if
doesn't, copy them from an Apple system disk that is of the same 'vintage'
of GS/OS as that on the floppy disk.  You'll likely have to make some
room--offing some large font files is usually a safe way to do this.  

I confess to not remembering the exact Apple SCSI driver filenames to look
for.  I've used a CVT RAMFast card for so long (and so haven't had any use
for the Apple driver files) that they've slipped my mind.

I seem to recall, though, that the 'bare bones' GS/OS 6.01 floppy disk
that was part of the GS/OS 6.01 suite came w/ the ability to recognize and
access the Apple HS SCSI card.  If you have that disk--and the premises
that i first listed above are pertinent--you might try booting from that
floppy disk.  N.b. that this 'bare bones' disk is not the first disk in
the 'Install GS/OS' disk set--it's one of the last.
