Pick one.  Pick a recent one.  I have "The Complete Book of HyperTalk 2",
which is a programmer-oriented reference detailing the HyperTalk language
more than anything else.  Books exist for all levels of HyperCard users,
and the one you choose should suit your level and interests.
 
As far as I know, no GS diff sheet has ever been made up - the differences
are mostly as follows:
 
1) color - the GS has its own unique color commands.
2) windows - the GS is like HC 1.x in that it only has one window covering the
             entire desktop.  This means no window modification commands will
             work on the GS.
3) XCMDS - these are different on the GS (as is probably appropriate).
4) I think the GS is missing a couple of advanced graphics and or math functions
	
 
I still recommend many hours inside HyperCard itself as one of the best tutors,
as it has good help, a complete HyperTalk reference, a tour, and some basic
stack types.
