The three Apple monitors used with Apple II's that I know of are:
Monitor ///:  Had a switch on front, was labelled monitor ///.
      Anti-glare screen.
Monitor 2 (I think):  The screen could be tilted up or down, switch
      on the front, upper right corner.
The composite color monitor:  Sounds like what you're describing.
      Had a small fold down panel on the front concealing color
      control knobs.  It could be switched between color and B&W.
The RCA jack is for a composite video signal, like what you would
input into a VCR.  Some TV's have a composite input too.  All
Apple II's have a composite video output (including the GS, in
addition to the GS's RGB output).
