Sounds like the resources got mangled.  If you understand resources, scan the
finder for the menu strings and fiddle w/ the menus so the apple comes back.
I can't remember off hand which character is the apple, but i think it's the
'@'.

Otherwise, try recopying the finder from the system disks.
