AppleWorks --> Mac

I have a small problem... My father uses my old Apple //e
(yes, the good old one, not enhanced !). It has a DuoDiskDrive,
a parallel card, a super-serial card, a 80col/128K card and
a Z80 card.

I use a Macintosh SE/30, and I've just bought a new Mac. So, my
father will use my *old* mac, instead of the //e. The only program
he used was AppleWorks. And I'll need to convert his files for the
macintosh.

Now, the questions :

1) The only way to get the data will be a serial line, and sure,
I'll to send the data in ASCII. I'll use Apple Access //.
   Is that OK ?

2) Now, the conversions Word file --> no problem
Database file --> export in DIF format or ASCII ?
Spreadsheet file --> no ideas how to get the formulas
                                               translated ????

(I think ClarisWorks on the mac can handle Appleworks file... Advices ?)

3) The infamous special characters... Yes, in Belgium, we use accentuated characters.
An older experience told me they were not converted right ! Is it an utility to
   handle that ?

Many thanks if you could help me !
