The biggest software difference between an 8-bit Apple II and the IIgs is 
the concept of relocatable code.  Sure you cool write a program to 
relocate itself on a II, but with a GS you virtually never need to worry 
about picking a nice address to put your code at.  This is a very big 
difference, esp. if you do anything with assembly.  It makes memory 
management easier, more flexible, and more efficient.
