They certainly should. The "undo" etc. labels were probably there for
the standard mapping of those keys on the Macintosh. They can be used
for any function you like on the IIgs, provided your software supports
function keys (which is rare).

That is correct - Caps Lock lights up. The others don't, because "num
lock" and "scroll lock" are not standard functions (on the Mac or the
IIgs). Most of the labels on the Extended Keyboard seem to be
intended for use with an IBM PC emulator, and if you use the Extended
Keyboard with a PC Transporter, all of the keys have their labelled
functions, and all three indicator lights work (on a ROM 03, at least
- I haven't tried it on my ROM 01 but I see no reason why they
wouldn't work).
BTW, there are at least two programs around which make the Caps Lock
indicator light work on a ROM 01.
