How about some appletalk file-sharing utilities, so users with IIGS or
appletalk IIe machines could at least exchange files over appletalk. GS
server software would be even better. I think the product would be unique
enough that users would register shareware fees, buy a license, whatever. I
also doubt you would recover your investment if you had to buy IIe appletalk
cards, IIGS's, etc. to test your software. But, such are the things dreams
are made of ...

Color GIF viewer (GIFview, SuperConvert etc. seem to
blow the images up, giving R,G,B on interleaving lines.
Mac viewers give very pleasing color TV quality images
as detailed as the GS black-white images. Why can't the
GS display a color GIF in color?)
A program that would allow me, and only me, to correctly
predict the winning numbers in Powerball lottery :)
GS/OS System 7.x, with powerPC emulator - including the
68k emulator that would be faster that a native 68k
emulator.
That should be enough to keep you busy this semester ;-)
